i really love chicken salad sandwiches but mayo isn’t really on my list of healthy foods, and i’m trying to cut down on bread so i decided to whip up some mayo-less chicken salad. instead of making a sandwich i resisted the urge and used lettuce cups instead. this meal is super easy, healthy, and really delicious!
ingredients:
chicken (this time i actually made it with leftover grilled chicken but any chicken will work. i’ve even made it with rotisserie chicken from the store.)
avocado- i used half but you can adjust it based on how many calories you want to eat
diced jalapeno- i used half and took out the seeds but you could leave some in for a spicier version
celery
salt and pepper to season
mix all of the ingredients together and voila!
i scoop the “chicken salad” into romaine lettuce leaves and top it with some pico de gallo. the great thing about this recipe is you can add anything you want. i love mexican food so the fact that it has avocado and salsa on top is right up my alley. i also add cilantro sometime and it’s delicious! so there you have it…quick, easy, and super yummy!
